Spurred by her desire to share this rich part of our history, she first founded the <strong>Calahorra Museum<\/strong>, followed by <strong>La Casa Andalus\u00ed<\/strong> and the <strong>Museum of Alchemy<\/strong> &#8211; three unmissable gems set right in the historic centre of the city of C\u00f3rdoba..<\/span><\/p>\n<p><span style=\"font-weight: 400;\">And naturally, the culinary aspect was not far behind. Salma also opened a restaurant, the <strong>Sal\u00f3n de T\u00e9 C\u00f3rdoba<\/strong>, where you can enjoy the wide-ranging flavours of the eastern Mediterranean, or simply sit a while in this little piece of the XIII century, drinking fragrant tea accompanied by delicious almond pastries.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Salma is <strong>the very quintessence of cooking<\/strong>, as is the case with almost anything she sets her mind to. Her dishes are exquisite, with layer upon layer of aromas and flavours. She uses an endless variety of spices and knows the <strong>precise cooking point<\/strong> of every ingredient, all of which she brings together with olive oil\u2026 always.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Above all, she is <strong>a woman of Faith<\/strong>, bridging East and West with clarity and conviction. She treasures our EVOOs, which she not only uses in her cooking but also gives as presents to her most special guests. True to her Palestinian roots, for her olive oil is simply <strong>the very best gift of all<\/strong>!<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Today we\u2019re going to start with something simple to prepare: <strong>Salma\u2019s lovely recipe for hummu<\/strong>s combined with a finishing touch of <a href=\"https:\/\/lacultivada.com\/en\/comprar-aove\/aove-quintaesencia\/\" target=\"_blank\" rel=\"noopener\">La Cultivada Quintaesencia<\/a>. Here is the full recipe, and do let me know how yours turns out!<\/span><\/p>\n<h3><b>Ingredients<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">500 g cooked chickpeas<\/span><span style=\"font-weight: 400;\">\n<p><\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2\u20133 tbsp tahini (sesame paste)<\/span><span style=\"font-weight: 400;\">\n<p><\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1\u20134 tbsp fresh lemon juice (to taste)<\/span><span style=\"font-weight: 400;\">\n<p><\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 clove garlic<\/span><span style=\"font-weight: 400;\">\n<p><\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1\u20132 tbsp <a href=\"https:\/\/lacultivada.com\/en\/comprar-aove\/aove-quintaesencia\/\" target=\"_blank\" rel=\"noopener\">La Cultivada Quintaesencia Extra Virgin Olive Oil<\/a> (EVOO)<\/span><span style=\"font-weight: 400;\">\n<p><\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1\/2 tsp ground cumin<\/span><span style=\"font-weight: 400;\">\n<p><\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Salt, black or white pepper, and more cumin for sprinkling<\/span><span style=\"font-weight: 400;\">\n<p><\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">40\u201360 mL water<\/span><span style=\"font-weight: 400;\">\n<p><\/span><\/li>\n<\/ul>\n<h3><b>Preparation<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">Soak the dried chickpeas the night before. The next day, rinse and cook: bring to the boil in a saucepan of water and\u00a0 then lower the heat until and simmer until tender. Leave them to cool before adding to a food processor.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Meanwhile, mix the tahini with water in a bowl. Stir well, then add the lemon juice, salt, pepper, and cumin to taste. Add this mixture to the processor along with the garlic. Adjust the amount of water depending on whether you want a creamier or firmer consistency; the hummus shouldn\u2019t be dry.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Once everything is well blended, add <a href=\"https:\/\/lacultivada.com\/en\/comprar-aove\/aove-quintaesencia\/\" target=\"_blank\" rel=\"noopener\">La Cultivada Quintaesencia EVOO<\/a> and process for a further 20 seconds.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Serve the hummus in a shallow dish, shaping it nicely with the back of a spoon.<\/span><span style=\"font-weight: 400;\"><\/p>\n<p><\/span><\/p>\n<p><span style=\"font-weight: 400;\">Garnish with a few whole chickpeas and some parsley leaves.
