Olives are given by God, the oil is made by a Master"},"content":{"rendered":"<p><span style=\"font-weight: 400;\">Before entering La Cultivada into competitions,<\/span> <b>I used to be a tasting judge<\/b> a<b>t international EVOO competitions<\/b> <span style=\"font-weight: 400;\">where we assessed the quality of olive juices.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">We\u2019d score<\/span> <b>EVOOs from across the Mediterranean<\/b> <span style=\"font-weight: 400;\">\u2014 Greek, Spanish, Italian, French, Turkish, Tunisian, Montenegrin, Moroccan, Lebanese, Palestinian&#8230;<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Sometimes we\u2019d taste up<\/span> <b>to 700 oils in a single week<\/b><span style=\"font-weight: 400;\">!<\/span><\/p>\n<p><span style=\"font-weight: 400;\">It was the only time of year I wasn\u2019t able to eat my usual breakfast of toast with olive oil because I was practically swimming in the stuff.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">These competitions usually take place between February and March, so the oils were about five months old by then.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">This experience really helped train my palate and gave me a deep understanding and knowledge<\/span> <b>of the organoleptic profile<\/b><span style=\"font-weight: 400;\"> of a good EVOO.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">At the same time, I started applying that knowledge to my own project,<\/span> <b>that is exploring and figuring out what a good EVOO meant here<\/b>, <b>in my homeland<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">I learned that there\u2019s no secret formula <\/span>\u2014 <i><span style=\"font-weight: 400;\">no &#8220;Coca-Cola recipe&#8221;<\/span><\/i> \u2014 <span style=\"font-weight: 400;\">and that the profile I initially wanted couldn\u2019t be forced.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">I wanted my oils to be bolder and more intense, but it wasn\u2019t the case. In fact, they were incredibly balanced and that in itself was a great asset because they paired sensationally with all kinds of dishes.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Tasting oil on its own is one thing. But using it in the kitchen? That\u2019s a whole different story. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Very intense oils can overwhelm a dish, so they\u2019re not always as versatile.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In this pursuit of excellence, I came to see<\/span> <b>how extraordinary the oils from my land really are<\/b>, <span style=\"font-weight: 400;\">and that the secret lies in a careful selection process.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">That said, if any single part of the production process \u2013 cultivation, harvesting, extraction, selection and storage \u2013 isn\u2019t handled with care, there\u2019s<\/span> <b>no chance of producing award-winning oil<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Every region has its own character, and crafting a signature oil is a journey of discovery.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">As the saying goes, <\/span><b><i>\u201cOlives are given by God, the oil is made by a Master.&#8221;<\/i><\/b><\/p>\n<p><span style=\"font-weight: 400;\">The<\/span> <b><i>terroir<\/i><\/b><span style=\"font-weight: 400;\"> represents our uniqueness, and that\u2019s how it should be. And by following clear, objective standards, we can turn those olives into true liquid gold.<\/span><\/p>\n<p><b>What do we look for in a tasting panel?<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Complexity, as in<\/span> <b>a wide range of aromas and flavours,<\/b> <span style=\"font-weight: 400;\">along with overall <\/span><b>balance<\/b> <span style=\"font-weight: 400;\">and harmony<\/span>.<\/p>\n<p><span style=\"font-weight: 400;\">And if the <\/span><b>flavour lingers beautifully<\/b> <span style=\"font-weight: 400;\">on the palate (a long aftertaste), then it\u2019s a perfect ten.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Eventually, I had to stop participating as a judge so I could enter<\/span> <b>our own oils<\/b> <span style=\"font-weight: 400;\">into competitions.<\/span><\/p>\n<p><b>I couldn\u2019t be<\/b> <b><i>handing out medals and be in the running<\/i><\/b> <span style=\"font-weight: 400;\">for one<\/span><b>!<\/b> <\/p>\n<p dir=\"ltr\"><span style=\"font-weight: 400;\">But it was more than worth it.
